It’s fungi season here in Meghalaya, known for its heavy rainfall. With the monsoon comes beautiful fungi. I love mushrooms and today I’m making a simple stir fry with dried smoked shiitake mushrooms. First, hydrate them in hot water for 15 minutes, then cut and stir fry in vegetable oil. Mushrooms are low in calories, high in antioxidants, and a good source of vitamins B and D, supporting immune health and reducing inflammation. However, be cautious when foraging; avoid mushrooms not eaten by locals, as there was a recent tragic incident here. Today, I’m enjoying a garlic mushroom stir fry with black rice and fresh mango. Black rice is rich in antioxidants and fiber, while mangoes are high in vitamins A and C, promoting heart health and boosting immunity.
