Kadhi Pakoda

We had an early start to the day as Mr. 12 had a full day engagement. I was hoping to drop by Murugan Idli Shop or MTR for breakfast but none of these places was open at that hour.

So we got back and ate random stuff for Breakfast. I asked
@mcsachin what he’d like for lunch and he said “Kadhi Chawal” without missing a heartbeat. He also suggested Khichdi - Kadhi as an alternative. But I’d already started planning Kadhi Pakoda in my head. So there wasn’t any going back.

I blended all the ingredients for the Kadhi in my
@kenstarindia blender. Using the
@boschhomesg stick blender with the grater attachment, I grated Carrots, Potatoes, Onions and Zucchini. I added the spices and Besan with Rice Flour and Salt and placed dollops of the batter on a lined Cookie sheet and baked them at 200C/400F for 20 minutes. When done, I transferred them to the air fryer with a coating of Oil while I baked the second batch.

I made the Kadhi using
@roopakspices Punjabi Kadi Masala. I almost considered making this in the
@instantpotsingapore to make it a no stove top meal, but since we all love the second tempering for which I have to turn on the stove anyway, I made the Kadhi on the stove top.

I made a quick Jeera Matar Chawal in the
@instantpotsingapore and then added the Pakodas to the Kadhi. Everything got a garnish of Coriander and I sliced some Cucumber and Cherry Tomatoes because Salads are a must.

It was a lovely meal and I know that a full meal such as this is possible even if I run out of gas. The baked/airfried Pakodas are not the best for snacking on, but are brilliant for soaking up the Kadhi!

I only needed a nice nap after this meal, but that wasn’t to be. Nonetheless, this was a Saturday lunch done absolutely right.
