Cheesy Mushroom Preparation time: 5 minutes Cooking time: 10 minutes Serving: 2 Ingredients For Sauteed Mushroom 1 tsp Butter 1 inch Ginger, chopped 2 Green chillies, chopped 1 tbsp Kasuri methi ½ medium Green bell pepper, medium dice ½ medium Red bell pepper, medium dice 10-12 small Button Mushrooms Prepared white sauce Salt to taste ¼ tsp Black pepper, freshly ground For white sauce 1 heaped tbsp Butter 1 heaped tbsp Maida 1 cup Milk 1 Black cardamom seeds For toast 3-4 sliced Brown bread ½ cup Processed cheese, grated For garnish Microgreens or fresh Coriander leaves freshly ground Black pepper Process For Sauteed Mushroom ● Firstly apply some wheat flour/atta to the button mushroom and rubber it properly and then wash it with water. ● After that remove the stems from the mushroom and keep it aside for further use. ● Now in a pan add butter and the washed mushroom, saute it for a minute and let it cook until light golden brown once cooked add some salt and remove and let it cool down. ● Now take the sauteed mushrooms and cut them into quarters (4) and keep aside. ● In the same pan add butter, ginger, green chillies, kasuri methi and saute it for a minute. ● Add green bell pepper, red bell pepper, mushroom and saute it for 2-3 minutes, then add the prepared white sauce, salt, pepper and mix it well. For toast ● Toast the bread slices in the toaster and then cut off the edge of the bread. ● Now start plating it by placing one toasted bread then add the mushroom mixture, some grated cheese and then repeat this process for two times and then garnish it with some microgreens and freshly ground black pepper. For white sauce ● In a pan add butter, maida and cook it for a minute then in this hot mixture add room temperature milk and whisk it properly without lumps. ● Now add some black cardamom seeds, mix it properly and keep it aside for further use.

Dabeli Preparation time 25-30 minutes Cooking time 5 minutes Serving 4-5 Ingredients For Dabeli Masala ½ cup Coriander seeds 2 tbsp Cumin seeds 1 tbsp Fennel seeds 4 no Black Cardamom 2 no Star anise 2-3 Clove 10-15 Black Peppercons 1 tbsp White Sesame seeds 2 inch Cinnamon stick 2-3 Bay leaf 2-3 Dry Kashmiri chilli ,broken in half 2 tsp Black salt 1 ½ tsp Degi red chilli powder ¼ tsp Asafoetida ⅓ cup Dry Coconut ,grated 2 tbsp Peanut oil 2 tsp Sugar For Red Garlic Chutney 10-12 Dry kashmiri red chilli , soaked 10-12 Garlic cloves Salt to taste 1 tsp Sugar ½ tsp Degi red chilli powder 2 tsp Peanut oil ¼ cup Peanut For Filing 3 no Boiled potatoes ,grated 2 tsp Peanut oil 2 tbsp Prepared dabeli masala 2 medium Onion ,roughly chopped 1 Green chilli , chopped 1 tbsp Coriander leaves , chopped 1 tsp Lemon juice For Assembling Tamarind chutney Red garlic chutney Nylon sev Pomegranate pearl Butter 2-4 Pav Process For Dabeli masala ● In a pan, add coriander seeds, cumin seeds, fennel seeds, black cardamom, star anise, cloves, black peppercorns, white sesame seeds, cinnamon stick, bay leaf, dry kashmiri chilli, black salt, degi red chilli powder, asafoetida and dry roast on low flame until the spices turn aromatic. ● Transfer it into a bowl, add grated coconut, transfer it to a mixer grinder jar and grind it smoothly. ● In the same bowl, add peanut oil, sugar, prepared mix give it a good mix. For Red chutney ● In a bowl, add soaked kashmiri red chilli, garlic cloves, salt to taste, sugar, degi red chilli powder, peanut oil and peanuts. ● Transfer the mixture into a grinder and grind it smoothly. ● Keep it aside for further use. For Filling ● In a non stick pan, add peanut oil, prepared dabeli masala, grated potatoes, little water and cook on medium flame. ● Let it cool at room temperature. Add masala peanut, chopped onion mixture, nylon sev and pomegranate pearl. For Assembling ● Slit the pav, spread tamarind chutney and red garlic chutney. ● Stuff the prepared aloo mixture and roll it in sev. ● In a non stick pan, add butter and toast it well from both the sides. ● Garnish it with coriander spring and pomegranate pearl

Chicken Burger Preparation time : 15 minutes Cooking time : 25-30 minutes Servings : 2 Ingredients For Sauteed Veggies 2 tbsp Oil 1 inch Ginger - chopped 2 fresh Green Chillies - chopped 1 tbsp Coriander Stems - chopped 1 medium Carrot - chopped Salt to taste Water For Chicken Burger Patty 1 cup Chicken Mince 1 tsp Mayonnaise Salt to taste ½ tsp Black Pepper Powder ⅓ cup Sauteed Veggies ½ tsp Dried Oregano 1 tbsp fresh Bread Crumbs Oil for frying For Filling 1 cup Cheese 2 fresh Green/Red chillies - chopped ¼ tsp Dried Oregano ½ tsp fresh Bread Crumbs For Relish 1 medium Red Bell Pepper - julienned 1 medium Yellow Bell Pepper - julienned Salt to taste ½ tsp Black Pepper Powder Water 1 tbsp Mustard Sauce 1 tsp Honey For Grilled Onion 1 tbsp Butter 1 medium Onion - cut in thick slices Salt to taste A pinch Black Pepper Powder Other Ingredients 2 Burger Buns 1 tbsp Mayonnaise 1 medium Tomato - sliced 1 medium Cucumber - sliced A few Iceberg lettuce Leaves Relish Grilled Onions Mayonnaise 2 Cheese Slices Process For Sauteed Veggies ● In a pan, heat oil, add ginger, green chillies, coriander stem, carrot, salt, water and saute for 2-3 minutes until half done ● Keep it aside to cool down. For Filling ● In a bowl mix cheese, green/red chillies, dried oregano, bread crumbs and mix it well. keep aside for further use. For Chicken Burger Patty ● In a bowl, add chicken mince, mayonnaise, salt, black pepper powder, sauteed veggies, dried oregano, fresh bread crumbs and give it a good mix. ● Take a lemon size portion, add filling and give it a desired shape. ● Coat it well with bread crumbs and place the patty in hot oil. Shallow fry until golden brown and keep it aside for further use. For Relish ● In a hot pan, add redbell pepper, yellow bell peppers, salt, black pepper powder and saute it for half a minute. ● Add water, mustard sauce, honey, Cook it for a minute and keep aside for further uss For Assembling The Chicken Burger ● Apply mayonnaise to the toasted buns, place sliced tomatoes, cucumber and some lettuce leaves, chicken patty, add some relish, grilled onions, mayonnaise, cheese slices and top it up with another bun. Serve immediately.

Aloo Ki Jalebi Chaat Preparation time: 25- 30 minutes Cooking time: 10-15 minutes Serves: 2-4 Ingredients ¼ cup Tapioca Salt to taste 2 medium size boiled Potatoes 3 tbsp Curd 3 tbsp Water Water as required 1 cup Refined flour 1 inch Ginger juice 1 tsp Degi red chilli powder ¼ tsp Soda Oil for frying For Tamarind chutney 1 cup Tamarind Water as required ½ cup Jaggery For Tempering 2 tsp Oil 1 tsp Cumin seeds 2-3 dry Red chilli Salt to taste Pinch of Asafoetida For Aloo Chaat 2 medium size boiled Potatoes ½ tsp Red chilli powder Salt to taste Coriander sprig 1 tsp Oil 1 tsp Ginger, finely chopped 1 tsp Lemon juice ¼ tsp Roasted Cumin powder For Garnish Green chutney Tamarind chutney Aloo chaat Coriander sprig Process ● In a grinder jar, add topica, salt to taste and grind it smoothly. ● In the same grinder jar, add boiled potatoes, curd, water and grind into a smooth paste. ● Transfer it into the same bowl and mix it well. ● Add water as required, refined flour and whisk it well ● Add ginger juice, degi red chilli powder, water as required, soda and whisk it well. ● Strain the mixture to get Lump free batter ● Heat oil in a kadai, drop the batter make make spirals. Fry it for 2-3 minutes until golden brown and crispy on each side. ● Garnish it with aloo chaat, green chutney, tamarind chutney and coriander sprig. ● Serve hot. For Tamarind chutney ● In a saucepot, add water, tamarind and let it boil on medium flame. ● Add jaggery and let it boil until it melts on medium flame. ● Strain the mixture into a bowl and keep aside for Further use. For Tempering ● Heat oil in a pan, add cumin seeds and let it splutter. ● Add dry red chilli and asafoetida. Transfer the tamarind chutney into the pan. ● Add salt to taste and let it simmer for 5-6 minutes ● Let it cool down at room temperature.
