vishu sadya! an incredible culinary experience! traditional, but contemporary, in its presentation - the exact vibe of
@ettanrestaurant never had a less than perfect
@chefsri_g meal and this was no exception. in collaboration with
@thatthalasserygirl the vishu sadya was enjoyed by three generations of srinivasans, an impossible accomplishment ;) - there was every traditional element from the salt to the banana. the contemporary touches of edible flowers in the payasam, the food plated on banana leaves, the buttermilk in cooling tumblers were just amazing. while ettan service is always exceptional even with the sold out event and the over 28 items, service was seamless. the beloved tradition of hot ghee over rice served at the table was executed to perfection. there was the traditional mata rice and also regular basmati.
we started with the paripu (or dal) - flavorful but not spicy (our son enjoyed three servings) we went on to kerala sambar and my favorite pepper rasam both made to perfection! we enjoyed the kuttu curry made with yam, roasted coxonut, banana and chickpeas. of course
@chefsri_g doesn't give you one or two but three pachadis. there was beetroot (my favorite), pineapple and cucumber varieties. next came the stews again three varieties. first with mango cooked in coconut milk, cowpeas also cooked in coconut and pumpkin in coconut. all three tasted different even though cooked in coconut. speaking to the genius of the chef and the spices.
okra in yogurt (another favorite), avial and cabbage and beans sides came as the next course. even the condiments were in threes with mango pickle (my favorite and something i look forward to at weddings) inji puli and lemon pickle. of course we enjoyed all this with pappadams from guruvayur and homemade fresh ghee. there were three desserts-- the
@ettanrestaurant favorite tender coconut payasam but also the ada prabandam presented next to each with juxtaposition of hot and cold and rich and light. similarly constrated with sweet and savory banana chips.unbelievably this meal was unlimited!! had to post before i succumbed to food coma.
