Farinata, artichoke, thyme ricotta, walnut pesto and rocket 🌱 Farinata, also known as torta di ceci, is a savoury pancake made with chickpea flour and you find it all over the Maremma as street food with lots of cracked black pepper on top. It’s delicious on its own but we love to dress it with seasonal vegetables. We love this new addition to our wine menu - Maremmano Vermentino Superiore by Tenuta Casteani. @tenutacasteani , who we have worked with since we opened in 2019, is known for its commitment to quality and sustainability and employs both traditional and modern winemaking techniques to capture the unique essence of its vineyards. Located in the heart of Tuscany, this estate uses organic farming methods to produce award-winning organic wines made with the indigenous grapes from the Maremma - mainly Sangiovese and Vermentino - showcasing the true character of the region. Seventy hectares of wood surround the estate and make it a superb natural setting, teaming with wild boar, roe deer, hare, partridge and pheasant. Risotto al nero di seppia 🖤 Although considered a Venetian classic, squid ink risotto can be found all along the coast of Italy, and for us, it’s an absolute mainstay of coastal living in the Motherland. Historically, the coastal communities of the Maremma have relied on fishing as a primary source of their livelihood. The abundance of seafood, including cuttlefish, has influenced local culinary practices with cuttlefish ink which is readily available from local catches, becoming a natural ingredient in regional dishes.
