Try our Pili Nut and Shrimp Fried Rice Recipe!
Ingredients:
2 cups cooked jasmine rice, cooled
1/2 cup Querica Premium Pili Nuts, chopped
1/2 lb (225g) shrimp, peeled and deveined
2 eggs, beaten
1/2 cup frozen peas and carrots
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons vegetable oil
2 green onions, sliced
1 tablespoon cilantro, chopped (optional)
Instructions:
1) Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
2) Add the beaten eggs and scramble until cooked. Remove and set aside.
3) In the same skillet, add the remaining vegetable oil and cook the garlic until fragrant.
4) Add shrimp and cook until pink and opaque.
5) Add the cooled jasmine rice, frozen peas and carrots, soy sauce, and fish sauce. Stir to combine.
6) Return the scrambled eggs to the skillet and mix well.
7) Stir in chopped Pili nuts and green onions.
8) Garnish with cilantro if desired and serve hot!
