MONDAY MEAL INSPO🍴 because what better way to start your week & month than with some effortless & balanced meals?! recent meals ive enjoyed (& you will too!) … - whipped matcha yogurt with mango & coconut combine 1tsp matcha with a scoop of vanilla protein powder & your fav yogurt! it’s that simple 🥰 - coconut crusted tofu with a curried tahini dressing toss crumbled tofu in a bowl with 1/3c coconut flakes, 1tsp curry power, 1 tsp onion powder, & 1tsp garlic powder. mix and place on a baking sheet in the oven at 350 for 15ish mins. the dressing is just 1/3c tahini, 1/4c coconut milk or coconut yogurt, 1tbsp maple syrup, 1tsp curry powder, & the juice from 1/2 a lemon! grab a bowl, add Jasmine rice to the bottom, & massage some kale in olive oil. mix in your coconut tofu, roasted broccoli, & toss in the dressing. mid week meal inspo ft. a roundup of my recent hyperfixations🍴 each of these took legitimately less than 10 minutes to prep🤗so if you’re anything like me & are looking for a quick, nourishing meal or snack to dive into, these are made for you! 1. cookie dough stuffed dates … 2-3tbsp pb 2-3tbsp vanilla protein powder 1-2tbsp maple syrup mix ingredients & pack into a date. top with cacao nibs & a drizzle of dark chocolate! 2. salmon bite lettuce boats … wild caught salmon jasmine rice edamame cucumber microgreens romaine 3. pb chickpea blondies … 1 can chickpeas 1/3c pb 1/2c maple syrup 2tsp vanilla 1/3c alm flour 1/2tsp baking soda 1/2tsp baking powder preheat oven to 350. drain & pat dry your chickpeas, add to a blender, blend with all of your wet ingredients until a smooth batter forms. add in your dry ingredients & mix until combined. toss in some chocolate chips, pour batter into a 9x9 brownie pan, & bake for 25-30 mins! 4. red pepper romesco salmon with a Mediterranean quinoa salad & homemade lemon basil pesto … @havenskitchen red pepper romesco was the only thing I used for the salmon! just coat the salmon & bake at 350 for 15 ish minutes! for the quinoa salad: mix together quinoa, chopped cucumber, red pepper, feta, lemon juice, & olive oil & let sit in the fridge to marinate before plating! for the hummus spread: blend one can of chickpeas with lemon juice, basil, a spoonful of tahini, salt, & garlic powder! 5. mexican hot chocolate pb protein bites … 1/2c alm flour 2 scoops @nuzest chocolate protein 1/3c pb 1/4c cacao powder 1/4c coconut oil 1/4c maple syrup 1tbsp cinnamon 1tbsp espresso 1tsp vanilla 1/4tsp cayenne pepper add all ingredients to a bowl & mix until combined. form bite sized balls & roll in cacao nibs for an extra crunch! #midweekmeals #mealideas #healthymeals #healthymealprep #nourishingfoods #nourishingmeals #simplemeals #easydinner #healthydinner #sweettreats #sweets #healthydessert #healthyfood #balanceddiet #easyrecipes #healthyrecipes #mealinspo #inspiration #inspo

ice cream thats vegan, gluten free, gut friendly, & supports my hormone health?! yes please! no ninja creami, no problem! just take all of the ingredients listed below & blend in a blender, store in the freezer for 30-40 minutes (or until it reaches an ice cream consistency), scoop, add your toppings, & enjoy! mid week meal inspo: lazy girl edition! each of these took about 5 minutes to throw together, which is a non-negotiable for me in the summertime when I don’t feel like turning on the oven or prepping a whole meal! 1. spring roll salad: chop veggies of choice (I went with cucumbers, carrots, & bell peppers), throw them over a bed of rice & bib lettuce, add tofu, avocado, & fresh mint. top with a drizzle of 2 ingredient peanut sauce (1tbsp pb + 2tbsp coconut aminos)! 2. coffee cake yog bowl add yogurt of choice to bowl & top with a banana, chopped walnuts, hemp seeds, cacao nibs, & @themuffindrop coffee cake muffins! 3. curried tofu with a creamy cashew butter sauce I used my already prepped & ready to eat baked curried tofu & broccoli & put them over top a bed of jasmine rice, added raw cashews & edamame, & topped it off with a creamy cashew balsamic sauce! 4. double chocolate pb fudge protein bites 1/2c cacao powder 1/4c protein powder 1/2c creamy natural pb 1/4c maple syrup combine ingredients in a bowl & mix until a dough forms, & then form bite sized balls. top with melted @hukitchen dark chocolate & cacao nibs! 5. coconut curry bowl I used the same prepped tofu that I had prepped for the week & mixed that in a bowl with jap sweet potato, chickpeas, spinach, carrots, & a creamy & delicious coconut curry sauce over a bed of jasmine rice! garnish with micro greens of course :) save for later & give them a try for yourself! you will not regret it😋 #mealinspo #midweekmeals #easymealprep #easymealideas #healthymeals #healthylunch #healthydinner #highprotein #proteinpacked #plantbased #vegan #veganrecipes #highproteinvegan #healthyfood #balance #balanceddiet #healthylifestyle #inspiration #inspo
