Ok let’s talk about salads….not a huge fan, especially cold salads. However, I’m on a fitness journey to help fuel my body with healthful food….so I figured that I would start implementing more salads. This one is just a bed of kale, and I added some sautéed veggies (mushrooms, red bell peppers, and red onions), avocado, sliced strawberries, a few cashews, small amount of brown rice, and the spicy, lemony, sweet tofu that I left. Topped the salad off with some cilantro, lime juice, and grape seed oil 😊
