**Lions Mane Pasta**
One of my favourite dishes to cook with my fresh lions mane along side some home-made pasta inspired by @malinowski84 and his pasta making at home. Nothing too fancy going on but I’ll stick the recipe below if you’re interested. It is bloody delicious and was devoured in a quarter of the time it took to make.
Ingredients
Lions Mane 🦁
Cherry tomatoes 🍅
Butter 🧈
Garlic 🧄
Red onion 🧅
Balsamic or red wine vinegar 🍇
Fresh pasta 🍝 - eggs and 00 flour
Chilli flakes 🌶️
Salt and pepper 🧂
Olive oil 🫒

The guys at @wild_firepizza are my day 1’s. They were the first people who bought mushrooms from me and have been a constant ever since. Not only do they smash out some of the best pizzas I have ever eaten, they are a class bunch.
They have just opened their very own restaurant and it looks BANGING! I couldn’t be happier to see what they have achieved through hard work and care for amazing ingredients. From a small ‘one pizza at a time’ oven to slinging 100s of pizza every service. If you haven’t been, they get amongst it. You won’t be sad.

Kew Gardens has been epic today. Such a diverse array of fungi and habitats. Aside from the mushrooms there are some amazing trees, wildlife and things to do. 💯 will be back, 10/10, blown away.

Massive shout out to Adam from @threadsintheground for making this plant pot using my Blue Oyster Grain Spawn.
This pot was born out of a project ran for a local primary school by Adam, myself and local artist @owenjamesharris . This involved making sculptures out of mycelium to show how important mushrooms can be as a viable material with hundreds of applications. Adam used straw and mixed sawdust along with my grain spawn to create this stunning mushroom plant pot. He left it outside which allowed these beautiful oysters to grow. Usually the item created would be dried out to stop whatever strain of mushroom from fruiting, but in this case Adam had some lovely mushrooms to take to the family table for dinner. Mycelium materials like this would utilise a fast growing ‘slow fruiting’ strain of fungi, but this was a very cool experiment.

Some local wild oyster cloning going down. 🍄🤞
This process isn’t exactly the most straight forward thing to do, but it is a really fun thing to do. Cloning wild mushrooms often comes with loads of work but it will be well worth it if I can add a local oyster strain into rotation in the fruiting room.

Drying some oyster mushrooms to the wonderful @herbalmedela to work with. She will be making some supplements with them in the shape of capsules and tinctures. The benefits of oyster mushrooms are often overlooked, but they are packed full of goodness. Bags of vitamin B3, vitamin D, potassium and zinc just to name a few, and also have antiviral properties. What can’t this mushroom do!

These pink oysters have been a total bucket list mushroom for me. I have had some pretty hard failures when it comes to growing these amazing looking oysters. Super happy with the way these turned out, the colour, the taste and the form has blown me away. Very much a tropical variety of oyster mushroom, so no wonder it has been a hard one for me to cultivate in the north east of England. This summer hasn’t exactly been hot!
