La mise de notre Pavillon Blanc 2023 a commencé au Domaine. C’est lors de cette étape que notre équipe s’occupe de mettre en bouteilles notre vin blanc, qui était jusque-là conservé en barriques. Un travail d’une grande importance pour assurer la bonne conservation de nos vins. • The bottling of our 2023 Pavillon Blanc has begun at the Domaine. Nous allons accueillir dès lundi matin nos 90 saisonniers pour débuter les éclaircissages. Lors de cette opération, notre équipe va supprimer une partie des grappes, afin d’offrir à celles restantes de meilleures conditions de maturation jusqu’aux vendanges. • We will welcome our 90 seasonal workers starting Monday morning to begin the thinning process. Sous les marches du Château se situe l’entrée du rez-de-jardin. Pensé pour que la demeure soit à la fois fonctionnelle et confortable, ce niveau était à l’époque dédié aux serviteurs. On y trouvait notamment la lingerie, la chaufferie et les différents espaces de stockage. • Beneath the steps of the Château is the entrance to the garden level. Designed to make the residence both functional and comfortable, this level was originally dedicated to the servants. Après avoir passé l’hiver au chaud dans l’étable, notre troupeau de vaches a fait son retour dans nos prairies. L’orangerie du Domaine est utilisée tout au long de l’année notamment pour accueillir nos vendangeurs lors des repas. Néanmoins, elle retrouve chaque hiver sa fonction première, et garde donc tous nos arbustes à l’abri jusqu’aux beaux jours. • The orangery at the Estate is used throughout the year, especially to host our grape harvesters during meals. Jusqu’à leur expédition, les bouteilles de vin sont conservées en tiré-bouché dans notre vinothèque, c’est-à-dire sans étiquette ni capsule. Ainsi, elles ne sont habillées, puis mises en caisses, que lors de leur préparation avant de quitter le domaine. • Until they are shipped, the wine bottles are stored « tiré-bouché » in our wine library, meaning without labels or capsules.
