Crunching into lumpia is a top-tier experience, but let’s take it up a couple levels by adding @indomieus noodles into the mix! Packed inside, the crispy reveal dares anyone to stop at just one!
- Boil the Indomie noodles in 400 ml of briskly boiling water and simmer for 3 minutes.
- While the noodles are cooking, mix all seasoning sachets (according to taste) in a bowl.
- Remove the noodles from the water and drain well.
- Add the noodles to the seasoning and mix well.
- In a bowl, combine the seasoned noodles, minced onions, carrots, garlic, and mushrooms.
- Cut each lumpia wrapper diagonally to create two triangles.
- Take one piece of the wrapper and scoop about 1 to 1.5 tablespoons of the noodle filling onto it. Spread the filling, then fold both sides of the wrapper inwards.
- Fold the bottom of the wrapper and brush the beaten egg mixture on the top end. Roll it up until completely wrapped.
- Repeat this process until you have used all of the noodle mixture.
- Heat oil in a pot over medium heat to 375 degrees F. Deep fry the lumpia until golden brown.
- Remove from the pot and let the excess oil drain. Serve once cooled and enjoy!
