Crispy Oyster Mushroom in a Creamy Sauce 🍄 This is a fab high-protein vegan friendly meal. If you think you don’t like tofu try this 👍 Using silken tofu instead of dairy for creamy sauces is my favourite way to get non-lovers of tofu on to it. This is a slight variation of the recipe on the app. I didn’t have shallots so substituted shallot for white onion. I also swapped out the greens for leeks and spring onion. Ingredients: extra virgin olive oil – 4 tbsp King oyster mushrooms – 400g, torn (or Maitake, or mixed wild mushrooms) Silken tofu – 200 g Soy sauce – 2 tbsp Water – 200 ml Spring onion – 100 g, finely diced Garlic cloves – 5, diced Leek - 200g Dill - 20g Parsley 20g #doctorskitchen #foodasmedicine #lifestylemedicine #easyrecipe #healthyrecipe

You should be avoiding this “healthy” food 🙅‍♂️ Many “healthy” foods are heavily advertised as convenient and nutritious snacks or meal replacements, but a deeper look at the ingredients might make you think twice before reaching for them in the shops! 👀 Generally, labels with “high in fiber,” “low sugar,” or “gut healthy” are huge red flags we should avoid, and here’s why: 🚩 A lot of these foods are actually quite processed, often packed with additives that are not good for your gut health. 🚩 They usually contain a lot of added sugars. 🚩 They lack substances like fiber and protein. 🚩 They have lots of added artificial ingredients such as thickeners, flavorings, and colorings. Protein bars are a prime example. While having one occasionally won’t affect your health, I wouldn’t recommend eating them regularly. Looking for a delicious coffee alternative? Try Maca! 🙌 Maca is actually part of the “brassica” family - just like broccoli, cabbage and caulifower! It contains: 👉 Glucosinolates, known for their anti-inflammatory and antioxidant effects 👉 Other polyphenols 👉 Minerals like zinc and magnesium Traditionally, it was first grown in the Andes mountains of central Peru about 2000 years ago. This traybake uses our tofu, lentil and mixed bean chilli as a protein and fibre-rich topping for a base of roasted sweet potatoes.
