Recipe: (makes 12 bites)
-1 cup almond flour
-1/4 cup vanilla protein powder (or more almond flour)
-1 tbsp Tenzo matcha powder
-1/2 tsp blue spirulina powder (optional for color)
-1/4 tsp salt
-1/2 cup cashew butter
-1/4 cup maple syrup (or agave)
-1 tsp vanilla extract
-1/4 tsp peppermint extract
-1/4 cup dark chocolate chips
-1/4 cup cacao nibs (or more chocolate chips)
In a medium mixing bowl, stir together almond flour, protein powder, matcha, blue spirulina if using, and salt. Add in cashew butter, maple syrup, vanilla extract, and peppermint extract and stir until well combined, using your hands to mix if needed. Add in chocolate chips and cacao nibs and combine well. Roll into balls. Enjoy right away or place in the fridge for 1 hour to firm up. Store in an airtight container in the fridge for up to a week.
