Or, build your own poke bowl at our in-house poke bar. Craving something light and bright for lunch? This plant-based Curried Chickpea Salad Sandwich is packed with flavor and simple to make. Here’s the 5-step recipe: 1. Drain and rinse 1 (15-oz) can of chickpeas. Transfer the chickpeas to a large bowl and mash about half of them with a potato masher or the back of a fork. 2. Add ½ cup mayonnaise, 1 Tbsp Dijon mustard, ¾ tsp curry powder, ⅛ tsp cumin, 1 pinch cayenne pepper, 1 tsp lemon juice, and ¼ cup roughly chopped golden raisins to the bowl. 3. Add 2 thinly sliced scallions and 2 Tbsp chopped cilantro leaves. Stir to combine. 4. Toast two slices of your favorite bread. 5. Layer one slice of toast with ½ cup chickpea salad, 1 tomato slice, 2 Tbsp pickled red onions, and a few pinches of microgreens. Top with the remaining piece of toast and enjoy.

These bright, lemony, garlicky beans make a great appetizer or snack. Scoop them up with crunchy crostini or whole grain chips! Here’s the 5-step recipe: 1. Using a vegetable peeler, cut off large strips of zest from a lemon, being careful not to get the white pith. 2. In a small pot, combine the lemon peels, ¼ cup extra virgin olive oil, 4 fresh bay leaves, and 2 thinly sliced garlic cloves. Heat over low heat until simmering, 10 minutes. Let cool for 10 minutes. Strain through a fine mesh strainer, reserving the oil. Discard the solids. 3. In a large bowl, combine 1 (12-oz) can drained and rinsed cannellini beans, 1 Tbsp chopped fresh mint leaves, 1 Tbsp minced chives, 1 minced garlic clove, the zest and juice of one lemon, and the infused oil. Mix until well combined. 4. Cover and refrigerate the beans. Marinate for one hour and up to overnight. 5. Bring the snack beans to room temperature before serving, about 15 minutes. Garnish with red chili flakes and serve with toothpicks. Leftover snack beans will keep in the refrigerator in an airtight container for up to 3 days.

Tortelloni are like the big, fluffy brother of smaller tortellini. In this recipe we’ve tossed them with sun-dried tomatoes, creamy goat cheese, peppery arugula, and a fresh basil pesto. Serve this salad hot for dinner or keep it chilled and bring it to next week’s Fourth of July party with a bottle of @DAOUVineyards sauvignon blanc (the wine’s on sale through 7/2).
