Made a Lime Pie... dont have key limes in Norway, but it tasted very well and reminicent of the taste i remember from Florida.
Pie Bottom:
200g Pulverized Graham Crackers
40g Powdered Sugar
100g Melted Butter (unsalted)
Pie Filling:
3 Egg yolks (seperated from the whites)
400g Sweetened Condensed Milk
1.5dl Lime Juice (2/3 Cup)
+some lime zest perhaps from the already pressed limes

Pulverize the graham crackers into a bowl and add the sugar and melted butter, then by hand mix it together until it can keep it's shape while still having a sand like texture.
Shape it in a pie pan to your liking and put into the oven at 160c° (325f) for 10 minutes, take it out and let it cool to room temp.
For the filling add egg yolks to your kitchen machine and whisp together on high speed until thickened like a hollandaise sauce (almost looks like it too..)
Add the condensed milk, switch tool into a flat beater on medium speed now for just about 5 minutes.
And to finish it off add the lime juice switch to low speed and just gently mix it in, cover the bowl and cool down in fridge for 30 minutes.
Pour the pie filling in the form (the filling will expand slightly in the oven) and put it back in the oven at 160c° (325f) for 20-25 minutes.
The pie filling should have expanded which is a good sign of it being pretty much done that and the pie bottom being more solid.
Now just cool it down for 4-24 hours in the fridge (easy reciepe just a lot of waiting.)

My opinion: The taste was very nice, it is a lime heavy flavour and it's one of those small slice pies to just enjoy slowly... or just take a huge slice and go ham on it, whatever floats your boat 😂 Make your own cream, i just used bottled whipped cream and the images speak for them selves 🫣
Looks aside the flavour is wonderful and i recomend trying it!
