In early summer, while hiking in the mountains, it is common to encounter farmers busy with the first hay harvest in the pastures. Even today, some of them still practice mowing by hand.
The long days spent in the fields during June allow farmers to stock up for the winter and ensure their cows have a balanced diet. In fact, hay retains many of the nutrients of fresh grass, which the cows enjoy during the summer when they are in the alpine pastures. The resulting milk has a special fragrance, and the hay milk products made from it, such as yogurt, milk, and cheese, are rich in taste.
But the production of hay milk does more than delight our palates: it has additional benefits. Through this system, farmers help protect the biodiversity of the land and maintain the alpine landscape. 💙
