PEACH COBBLER 🍑🍑🍑
What you need:
- 5 peaches, peeled, cored and sliced (4 cups)
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
Batter: - 6 tablespoons butter ( I used 1 stick unsalted)
- 1 cup all purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup of milk
- Ground cinnamon
1. Add sliced peaches, sugar and salt to a saucepan and stir to combine
2. Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out the juices. Remove from heat and set aside
3. Preheat oven to 350 degrees. Slice butter into pieces and add to a 9x13 baking dish or smaller. Place the dish in the oven while it preheats to allow the butter to melt. Once melted, remove the pan from the oven.
4. In a large bowl mix together the flour, sugar, baking powder and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over melted butter and smooth it into an even layer.
5. Spoon the peaches and juice over the batter. Sprinkle cinnamon generously over the top.
6. Bake at 350 degrees for about 35-40 minutes. Serve warm with a scoop of ice cream!

I truly cannot remember one summer that my mom did not make this meal weekly growing up and she still does today. Decided to make her Zucchini Torte with all my zucchinis I picked up at @ed_lester_farms
Recipe for Zucchini Sausage Torte
What you need:
- 2 lbs of Zucchini
- 1/2 pound bulk pork sausage
- 1/4 cup of chopped onion
- 1/2 cup fine cracker crumbs
- 2 eggs slightly beaten
- 1/2 cup grated Parmesan
- Pinch of rosemary and thyme
- Garlic salt, salt and pepper to taste
Scrub zucchini and cut off ends. Bring water to a boil, boil zucchini whole until tender. Drain, chop and mash the zucchini. Cook onion and sausage together until brown. Add the mashed zucchini and remaining ingredients except 2 tablespoons of the grated Parmesan. Pour into a greased pie dish and sprinkle with remaining cheese. Bake at 350 for about 30 minutes!

Our last night in Harbour Island we ate @coralsandshotel at Latitude 25. We had the perfect setting and table overlooking the pool and beach. Sadly, this hotel and restaurant is closing for renovations this week but I’m sure when it reopens it will be even more fabulous!
