This past June we had our friends from @estbrew in Calgary down for a day of collaborative brewing. Their Rebel Girl modern saison was a highlight of ours from an earlier visit through Calgary and we took inspiration from that to brew a hop forward mixed fermentation delight. As this beer rests in a slow fermentation it is giving off aromas of overripe melons and zippy lime zest. Our house brettanomyces yeast is adding some signature pineapple notes and mild acidity. We look forward to sharing this with you all in the near future.
Wine Club Exclusive! 🍷
Dolly, a wine just for our club members went out a few days ago. Dolly is a light red wine made by fermenting Gamay and Merlot berries in Chambourcin juice. It got a light, gentle maceration and was blended with a touch of bone dry Riesling before bottling. A special wine indeed, almost everything we made is going to our importer Quebec, the few cases we were able to hold back in Winnipeg are already gone!
