The Winter Trio: yellowfoot (Craterellus tubaeformis sens. CA), hedgehog (Hydnum umbilicatum), and black trumpet (Craterellus calicornucopioides). In Sonoma they grow in the same habitat around the same time of year.
Each has a compelling, complex aroma. For me the black trumpets are sweet and earthy, very similar to sake, and the hedgehogs are closer to gouda. Can’t wait to cook with these 🤤
