Moong Dal Chilka Another healthy Ayurvedic dish. Moong dal chilka are unpeeled but halved moong. They need to be cooked a little longer than peeled ones. The peel gives them a slightly earthy taste. It came out super tasty. Love it. Served with Ayurvedic cooked chard and basmati rice.

Leftover Brocoli 🥦 I made a pesto out of it with Olive oil, Parmeggiano Reggiano, Garlic, Walnut and Parsley. With some Pepperoncini on a gluten free pasta.

Momo’s Bird Nest 🤣 My favorite 20min no time to cook menu in another version. With sautéed PakChoi,with chili and ginger, roasted sesame seeds as topping. Optional with hot chili sauce and/or soya sauce. Since I should not eat spicy (pitta constitution) I try not to. Momos from the fridge. I know not good in Ayurveda but still better as other highly processed food. I always eat them after a 3h Yoga workshop I have every week But now the teacher is in India and I missed the momos 😇

The bird nest Menue I had some leftovers from the weekend. Cooked basmati rice, some uncooked Barba di Frate and Lettuce. Barba di Frate is an old wild vegetable. It means monks beard :). Both are seasonal now here and can be eaten as a salad or cooked. I’m so happy spring is here. Vegetables options are much bigger now. I have cooked them together and added just some salt, pepper and lemon juice. Out of the rice I made fried rice with eggs, added shallots, garlic, chili, ginger, little sugar, sojasauce and mint. And guess what. The combo is delicious. Done in a 1/2h. Perfect for a quick working lunch

Quinoa Moong Dal Kitchari with Celeriac, Carrots and Fennel vegetables Another spring detox. With some Raita. I could not resist. Mixing Raita and Kitchi is sooo delicious 😋 Tried to replace the rice with Quinoa. Less carbs

Another Ayurvedic Indian breakfast: Poha So much better than our traditional breakfast: Bred, butter, Marmelade, Muesli with Fruits and Milk. It’s warm and easy to digest with a lot of healthy ingredients. And it tastes so good. Eating cold in the morning is just wrong. Your colon and stomach will thank you. I have eaten for years muesli with milk and fruits. An Ayurvedic no-go. Back to #Ayurveda . Another 1/2h menue. Chickpeas (precooked)with local seasonal vegetables. Cooked almost as a soup. My ideal way of eating for my constitution is liquid, nourishing and grounding. Added vegetables: parsnips, carrots, celeriac and spinach. Another 1/2h menu. I had some leftover stuff in the fridge from the weekend. Little chicken breast, potatoes, basil, zucchini. Voilà!
