✨My cookbook is finally here🥹🤍✨ What a journey it’s been but I could not be more proud of every recipe! I’ve been working on this cookbook for two years, pre-pregnancy, during and postpartum😅Alhamdullilah for this incredible opportunity with @penguinbookssouthafrica . ✨I started my gluten-free journey about 4 years ago when I was diagnosed with IBS. This meant I had to change my lifestyle and pivot into a new direction. This book has been years in the making while I was trying to figure out my new lifestyle. ✨All about my book✨Here are a few things I learned while baking gluten-free for a year: • The type of flour you use is so important to having a successful GF dessert. •Cassava flour is amazing for cakes. It doesn’t work for every recipe but it gives cakes a great rise. •Xanthan gum is required in almost every gluten-free recipe. It binds everything together just as gluten would. Flours that contain it are ideal so you don’t have to measure out something extra. •Gluten-free isn’t just for those with Celiac disease or for those with an intolerance. If you suffer from inflammation like rheumatoid arthritis it will decrease the inflammation in your joints. •Less gluten in your diet will reduce bloating around your mid-section. ✨This cookbook is for everyone to enjoy not just those who are GF. ✨Gluten-Free Oreos✨I wanted to see if I could get them to taste as good as regular home baked Oreos and mission accomplished! You’ll want to save this recipe because something very exciting is coming this Sunday and this post is a little hint👀Recipe below. •Recipe: •1 cup GF flour (with xanthan gum) •1/2 cup cocoa powder •3 tbsp. Corn flour •1/3 tsp. Baking soda •130g white sugar •1/2 cup softened butter •1 egg room temp, beaten •1 tsp. Vanilla extract •Icing: •1/3 cup butter, softened •1 cup icing sugar, sifted •1 tbsp. Milk •1 tsp. Vanilla essence Method: Whisk to mix dry ingredients, then add in the butter, egg and vanilla. The cookie mixture will be crumbly, so make sure to knead it to come together. Wrap in cling film and refrigerate for 40min. Roll the dough between baking paper to make it easier. For the icing combine everything together and mix well. ✨Lemon Ricotta Cake✨A one bowl recipe that has taken over my life😍Forget every fluffy, moist cake you’ve ever had because I promise you this one takes the cake😉The full recipe is below🤍 •Recipe: •120g butter, softened •120g castor sugar •2 tbsp. Lemon zest •2 tbsp. Lemon juice •1 cup ricotta cheese •3 large eggs •1 tsp. Vanilla essence •200g cake flour •1 1/2 tsp. Baking powder •1/2 tsp. Baking soda •Method: Cream the butter, sugar and zest together. Add in the cheese and mix. Add in the eggs one at a time and whisk in between each addition. Then add vanilla. Sift the dry ingredients and add it in 2 inclusions to the batter and mix- do not over mix. Place into 24cm round tin and bake in a preheated oven of 180C for 25-35min. Once the top is golden brown and a toothpick comes out clean, take out the oven to cool. Too with icing sugar and serve with mascarpone cheese.

✨Something Light✨Mini All Bran Muffins that took me about 30min in total to make😍If you’re like me and hate going out for ingredients, this recipe is ideal🙌 •Recipe •1 1/4 cups flour •3 tsp. Baking powder •1/2 cup sugar •2 + 1/2 cup all brand flakes (blitz into a finer pieces, not a powder though) •1/2 cup milk •1 large egg •1/3 cup vegetable oil •Whisk your fry ingredients and set aside. Soften the all bran with the milk and let it sit for 3 minutes. Then add in the egg and oil and mix well. Add in the dry ingredients and a handful of sultanas if you wish. ✨I’m sure many of us are feeling very helpless with regards to what Palestinians are enduring at the moment. I process a lot through baking and sharing recipes. I decided to start a series where I share some classic Palestinian dishes, where we can appreciate, and understand their culture and everything they are going through😓May Allah (SWT) make it easy for them IA. I have linked a family to evacuate in my stories. Any donation will do🖤❤️💚🤍 •Recipe for Atayef: •1 + 1/4 cups flour •1/4 cup Tastywheat/semolina •1 tsp. Baking powder •1/2 tsp. Instant yeast •1/2 tsp. Sugar 1 + 3/4 cups milk •Whisk dry ingredients together. Pour in the milk and whisk until the mixture is very smooth. Similar to crêpe batter. Set aside to rest for 10min. Butter a pan and make sure it’s medium-hot. Add 1 and 1/3 tbsp. To the pan and fry until you see many bubbles forming. Once done and the bottom is browned remove from the heat. Do not flip, only one side should be browned. •Once cool, press the edges together so they stick. ✨Gulab Jamun✨This Indian mithai or sweetmeat is something I grew up having and it was my favourite out of all of them (there are a lot!). If you’re keen for something different to the usual donut, definitely give these a try! •Recipe: •150ml condensed milk •2 tbsp butter, melted •1/2 tsp elachi powder/cardamom •1/2 tsp. Nutmeg •1/3 cup milk •1 and 1/3 cup self raising flour •2 cups vegetable oil in a small pot for frying. Fry on low until golden brown so the gulab jamun cooks through. •For the simple syrup- make it as you usually would and add in 1 tsp. Of rose water. Toss it inside so it’s coated well and slightly absorbs it and then toss in desiccated coconut and enjoy. If the dough seems too sticky, add a tablespoon of flour at a time until you reach a pliable consistency. ✨Chocolate Soufflé✨Such an easy dessert that looks super complicated! I made this one with dry ingredients (not something I’ve done before) and it made the process so much easier for me. •Recipe •4 egg whites and 2 egg yolks (separated) •1/2 cup cocoa powder •1/4 tsp. Cream of tartar •2 tbsp. Flour •55g sugar •1 cup + 2 tsp. Icing sugar •1/2 tsp. Vanilla extract •1/2 cup full cream milk •1/2 cup water •Whisk the flour, icing sugar and cocoa together. Add in water and milk- let it heat on the stove while stirring continuously. Once it’s very thick, remove from heat. •Whisk egg whites till foamy, then add in cream of tartar. About a minute later add in the sugar and whisk to stiff peaks. •Whisk egg yolks and vanilla separately. Then add to the cooled choc mixture.
