✨Lemon Ricotta Cake✨A one bowl recipe that has taken over my life😍Forget every fluffy, moist cake you’ve ever had because I promise you this one takes the cake😉The full recipe is below🤍
•Recipe:
•120g butter, softened
•120g castor sugar
•2 tbsp. Lemon zest
•2 tbsp. Lemon juice
•1 cup ricotta cheese
•3 large eggs
•1 tsp. Vanilla essence
•200g cake flour
•1 1/2 tsp. Baking powder
•1/2 tsp. Baking soda
•Method:
Cream the butter, sugar and zest together.
Add in the cheese and mix. Add in the eggs one at a time and whisk in between each addition. Then add vanilla.
Sift the dry ingredients and add it in 2 inclusions to the batter and mix- do not over mix. Place into 24cm round tin and bake in a preheated oven of 180C for 25-35min. Once the top is golden brown and a toothpick comes out clean, take out the oven to cool.
Too with icing sugar and serve with mascarpone cheese.
