NEW! ❤️💙 Back in the 2000s, I came up with my version of In-n-out’s “special” sauce. I’m definitely missing a few ingredients, but I loved the version I came up with. Grab your favorite store-bought veggie patty. For me, that’s Trader Joe’s Quinoa Cowboy with black beans and roasted corn. Top with veggies, special sauce, and on brioche buns. Super delicious Toor Dal Tadka in the Instant Pot. This version is so easy to make and inspired by my mother-in-law. 1. Add lots of ginger and garlic while the dal is cooking - this adds a ton of flavor. 2. Remove the white foam that sometimes forms on top of the dal - this can cause bloating or indigestion. 3. Make sure the oil is really hot before adding your tadka spices. And that’s it. It’s super easy and tastes AMAZING! Cheers🥂 to another year around the sun. I had one of the BEST birthday 🎂 celebrations this past weekend filled with so much love and FAMILY. My sil & our fam were in town and surprised me at “almost” midnight. After a long, long time, I celebrated my birthday with our family and that was the best gift. I miss family. So much! Sanjiv and I enjoyed a wonderful lunch date at @palmillanb in Newport Beach - my new fave spot for Mexican food. The grilled halibut tacos were outstanding! Also, the seabass ceviche and chicken enchiladas were delicious. Great service and ambience. We then enjoyed a @susiecakesbakery cupcake cutting and pizza dinner with Krish. Lastly, a very happy Father’s Day to Sanjiv ❤️! We had such a chill day and enjoyed a Bollywood movie after so long. Foolproof Instant Pot Jeera Rice 🍚 where each grain is separate. My mom taught me how to make perfect Jeera Rice and here are a few tips: 1. Wash your rice well and soak for 15 minutes. 2. Add oil/butter/ghee to your rice. Rice needs a little fat to ensure every grain of rice is separate. 3. Don’t overcook rice and fluff it with a fork once cooked. I kid you not, this sandwich is soooooo good! 24g of protein, 23g of fiber. Smashed Chickpea Avocado Salad Sandwich with a desi touch. Enjoy it on whole-wheat bread. Cilantro Chutney Tip: In the past, I was adding ice to my cilantro chutney while blending which stops the oxidation process, but also resulted in a slightly diluted chutney. The ice and additional water blended together made my chutney watery at times (I don’t have the vitamix). So now, I add a couple tablespoons of water to my blender (as needed) and then add less ice towards the end. Your chutney will be the perfect consistency and stay vibrant green 💚 for days with the help of lemon juice, a touch of sugar, and ice! Give this updated Cilantro Chutney recipe a try! Better than any 5 star meal - dal chawal. I know this isn’t giving Memorial Day vibes, but had to share the first thing I made when I returned home. Traveling with a kid! Mexico Recap! Sanjiv and I had fun, but Krish had a BLAST! 🤗 I’m not gonna sugarcoat it and say we didn’t have stressful dinners, we did, but there were many sweet memories that made up for it. The one thing I’m starting to realize when traveling with kids - bring the activities (coloring/stickers/iPad) - whatever they’re into… it’ll make the dinner experience a little more pleasant. I can’t give up the restaurants I want to dine at when traveling, but now I’m better prepared and choose to go with the flow when dining out with Krish. Looking back, the easiest and most fun moments were hanging out by the pool + enjoying a margarita, hanging at the beach, the golf carts, AND walking with Krish everywhere. ❤️ And now food! I wasn’t blown away with the food in Cabo this time around, but here are some recommendations. 🎣 Fisherman’s Landing (now Angler’s Landing) - BEST meal on our trip! If you love seafood, go here! Casual atmosphere on the marina. Excellent service by Carlos. Favorites - catch of the day (sea bass) - get it blackened or garlic. Cadillac & tamarind margaritas were excellent. Warm bread with herbed butter - incredible. And the flan - melts in your mouth - best dessert ever! 5 / 5 @anglerslandingcabo 🍕 Il Forno (Italian) - my sister wanted Italian for a change. Romantic - loved the ambience. Favorites - Shrimp linguine in a pink sauce, chocolate lava cake - out of this world! Notable - New York pizza, Roasted veggie pizza - both Neapolitan style. 4.3 / 5 @ilfornocabosanlucas 🍳 London Cafe & Bistro (brunch). If you have kids, they offer 1 hour of free babysitting + tips! Faves - egg chilaquiles, club sandwich. 4.25 / 5 🎉 Los Tres Gallos (Mexican) - festive, beautiful restaurant with live music. Best service on our trip! Food overhyped. Favorites - chips/salsa, catch of the day (sea bass) in a Veracruz sauce. Notable - chicken enchiladas. shrimp fajitas cold/terrible, margaritas - ok, flan/chocolate cake - average. 4 / 5 ⭐️ Maria Jimenez - second time here - ok for me. 3/5 Outpost - good apps -potato wedges, drinks. Beautiful restaurant. 3.5/5 Other reco - La Lupita (my sis went), Tacos Guss, Sunset Monalisa
